bread, garden pea, crunchy vegetables, black olive, chive and mayonnaise dressing

King Scallop
Raw carpaccio of Isle of Uist king scallop, chive cream, citrus and vanilla dressing

Fish Soup
Served with rouille, garlic croutons and shredded gruyère

Smoked Haddock
Hall Farm onion purée, smoked haddock, red onion “confit”, fennel

Scottish Langoustines
Langoustine tails, avocado, dill and cucumber, tomato gazpacho, croutons

Frog’s Legs
Served off the bone, garlic velouté, broad beans, green asparagus

Lamb Sweetbreads
Pan-fried sweetbreads, brioche, morel mushroom sauce, summer truffles

Pressed gateau of South West Landes foie gras, caramelized onion and honey chutney

Six, Colchester rock oysters, tabasco and shallot vinegar

Pan-fried fillet, wild boar English chorizo, capers, thyme, olive oil and spring onion, Ratte de Touquet potatoes

Gressingham Duck
Roasted breast of Gressingham duck, celeriac and smoked streaky bacon, onion velouté

Roasted saddle of Suffolk lamb, Savoy cabbage, rosemary and carrot sauce

The whole wing of skate “meunière” with capers, artichoke, sun dried tomato, lemon juice

Poached lobster tail, homemade seaweed tagliatelle, cream and seaweed butter sauce

Guinea Fowl
Roasted breast of guinea fowl, almond and sultana stuffing, amaretto sauce
